Tamarind is a fruit pod of a tree that is native to both northern Africa and Asia. It tastes both sour and sweet, something that is often attributed to dates, apricots and lemons. The vibrant flavour goes well in Indian curries and spicy dishes. It is commonly mixed with coconut milk to give it a softer taste. Other spices that are frequently mixed with tamarind include ginger, coriander and turmeric.
