Ingredients (Serves 4)
- 1 small red onion, thinly sliced into rings
- 2 tbsp rice vinegar
- 75g pack Thai Herb Kit (or see Cook’s Tip below)
- 500g pack slower reared 5% fat chicken mince
- 2 tsp fish sauce
- 1 tbsp sunflower oil
- 4 white floured baps
- ¼ iceberg lettuce, finely shredded
- ½ midi cucumber, thinly sliced
- 2 tbsp sriracha mayonnaise
- 500g bag sweet potato fries, to serve (optional)
Instructions:
- Place the red onion into a small bowl with the vinegar and a large pinch of salt. Let them sit to soften while you prep the rest — or make them up to 24 hours in advance and store in the fridge.
- Peel the garlic, shallot, and ginger from the Thai Herb Kit. Roughly chop the ginger and lemongrass, then combine in a food processor with the chilli and half the Thai basil leaves. Whizz until finely chopped. (Alternatively, chop everything finely by hand.)
- Mix the paste with the chicken mince and fish sauce in a large bowl. Shape into 4 even patties — the mixture will be soft but will firm up as it cooks.
- Heat the sunflower oil in a large nonstick frying pan over medium heat. Cook the patties for 5–6 minutes per side until golden and cooked through, with no pink remaining.
- Split the rolls, layer the lettuce and cucumber on the bases, top with the patties, then add a swirl of sriracha mayo, the pickled onions, and a few fresh Thai basil leaves. Serve with sweet potato fries, if you like.
Cook’s Tip
If you can’t find a Thai Herb Kit, use:
• 1 stick lemongrass
• 1 clove garlic
• 5cm piece fresh ginger
• 1 red Thai chilli
• A small bunch of Thai basil
• Some coriander
These ingredients recreate the same fragrant and fresh base — ideal for curries, stir-fries, or other Thai-style dishes too.
