At Pastificio del Colle, making pasta is an art. They stick to old-school methods, using top-notch durum wheat semolina and shaping the dough by hand or with bronze molds that make the pasta rough—just right for catching sauce. They also mix in natural powders to give the pasta fun colors, depending on the shape.

The pasta is dried slowly at a low temperature—about 38°C—to lock in flavor and goodness. When it's fully dried and hits just the right moisture level, it's packed up. The handmade ones go into clear bags by hand, while the rest are machine-packed, all stamped with the Pastificio del Colle logo.

Cooking time : approximately 7 to 10 min.
Store in a cool, dry place.
