The recipe includes 42 % almonds, paired with fruit confit, sugar, glucose syrup, water, egg white, and a wafer (hostie) base made from potato starch and sunflower oil.  That almond-rich ratio gives these mini calissons a smooth, melt-in-your-mouth texture with a full, nutty flavour that stands out.
