Gheimeh is a Middle Eastern word that means “finely cut.“ Because of the dehydrated lemons, this tomato-based stew is a little acidic,. It is flavoured with ginger and a pinch of cardamom. The majority of Middle Eastern stews include vegetables, but this one includes yellow split beans instead and is served with boiled potatoes. It is a complete dish in itself but can be served alongside salads, rice, flat bread etc.
