Chocolate Salami Calories: The Truth

But here is the good news: it is so rich that one thin slice is genuinely satisfying. It’s not like a sponge cake where you accidentally eat half of it. Treat it like a fine truffle—savour it.

Ingredients

  • 160g dried cherries
  • 2 tbsp dark rum (optional, but highly recommended!)
  • 65g salted butter
  • 140g dark chocolate (70% cocoa), roughly chopped
  • 75ml double cream
  • 125g amaretti biscuits or cantuccini
  • 20g cocoa powder
  • 40g blanched hazelnuts
  • 40g pistachio nut kernels
  • 25g icing sugar (for dusting)

How to Make Chocolate Salami (Step-by-Step)

  • Start by placing your dried cherries into a small bowl. Pour over the rum and let them hang out together for about 15 minutes. This plumps up the fruit and infuses the whole dessert with a warm, boozy kick. If you're keeping this alcohol-free, you can use orange juice or strong tea instead.
  • In a heatproof bowl, combine your salted butter and chopped dark chocolate. You can melt this in the microwave in short 30-second bursts (stirring in between so it doesn't burn!) or set it over a pan of simmering water. Once it's glossy and smooth, remove it from the heat. Stir in the double cream until you have a luxurious, thick ganache.
  • Take half of your biscuits (amaretti or cantuccini) and crush them into a rough powder. I like to use a rolling pin and a ziplock bag for this—it’s great stress relief! Add this powder to your melted chocolate along with the cocoa powder and stir well.
  • Now, crumble the remaining biscuits into chunky pieces. You want them big enough to look like "fat" in the salami.   • Once set, unwrap your salami. Generously sift the icing sugar over a board and roll the log in it, using your hands to rub the sugar into the crevices. This gives it that authentic cured-meat look.

To Serve: You can tie it with string for the full effect if you’re gifting it! Slice it up on a wooden board and watch your guests do a double-take.

Storage Tips

This salami loves the cold. Store it in the fridge wrapped in parchment or foil for up to 1 week. Honestly, it rarely lasts that long in my house, but theoretically, it can! You can also freeze it for up to a month—just thaw it in the fridge overnight before serving.
