Ingredients (Serves 4)

  • 1 small cauliflower, trimmed (reserve inner leaves)
  • 4 tbsp extra virgin olive oil

  • 340g spaghetti

  • 25g pack flat-leaf parsley, stems finely chopped, leaves roughly chopped
  • 1½ tbsp capers, drained, rinsed, and roughly chopped
  • 40g vegetarian Italian hard cheese, finely grated

Instructions

  • Preheat your oven to 220ºC (gas mark 7). Cut the cauliflower into evenly-sized, bite-sized florets. Place them in a large roasting tray, drizzle with 1 tablespoon of olive oil, season, and roast for 15 minutes. Add pine nuts and reserved cauliflower leaves, roasting for another 5-8 minutes until golden.
  • Bring a large pan of salted water to a boil and cook spaghetti according to the package instructions. Meanwhile, soak the raisins in hot pasta water to hydrate.
  • In a large pan, heat the remaining olive oil. Add garlic and parsley stems, sautéing until the garlic turns golden. Toss in capers for additional depth.
  • Drain the spaghetti, reserving a cup of pasta water. Toss spaghetti into the garlic oil mixture, adding raisins and their soaking liquid to maintain moisture. Incorporate roasted cauliflower, pine nuts, parsley leaves, and most of the grated cheese. Use reserved pasta water to create a silky sauce consistency. Serve with an extra sprinkle of parsley and cheese.
