Salads don't always have to be cold or simple. This Roasted Grape & Lentil Salad Recipe is proof that combining warm, roasted ingredients with fresh flavors creates a hearty, healthy dish that's perfect all year round. Not only does it satisfy your taste buds, but it also provides two of your recommended five-a-day. Plus, it’s ready in just 35 minutes!

Ingredients (Serves 4)

  • 500g carrots, trimmed and peeled
  • 3 tbsp olive oil
  • 200g Waitrose Sable Seedless Grapes, halved
  • 2 shallots, finely chopped
  • 2 tbsp red wine vinegar
  • 2 tsp clear honey
  • 2 x 400g cans lentils, drained and rinsed
  • 150g Greek feta, crumbled (strength 3)
  • Mint leaves, shredded (optional garnish)

Instructions

  • Preheat your oven to 220°C (gas mark 7). Slice the carrots into thin spears or wedges, toss them with 1 tablespoon of olive oil, season, and spread them evenly in a roasting tin. Roast for 15 minutes, allowing them to become tender and slightly caramelized.
  • Meanwhile, in another roasting tin, combine the halved grapes, chopped shallots, red wine vinegar, clear honey, and the remaining 2 tablespoons of olive oil. Season well and set aside until the carrots are partially roasted.
  • After the initial 15 minutes, remove the carrot tin from the oven, give them a quick stir, and then mix in the drained lentils. Return to the oven along with the grape mixture, placing both tins on the same shelf if possible, or the grape mixture slightly below. Roast for another 10 minutes.
  • Transfer the roasted carrots and lentils onto a serving platter. Spoon the warm, juicy grapes and their roasting juices over the top. Sprinkle generously with crumbled feta cheese and shredded mint leaves if using, and serve immediately for best flavor and texture.
