Japanese Katsu Curry Recipe

A delicious and comforting dish of crispy breaded chicken fillets served with a rich and flavourful Japanese curry sauce, perfect for a cozy dinner for two.

Katsu curry is a comforting Japanese dish that combines a savoury Japanese curry with a crispy panko-breaded protein (usually chicken or pork). The curry is often made with a roux block, vegetables like carrots and potatoes, and has a sweet and mild flavour. The crunchy cutlet pairs perfectly with the rich and flavourful curry sauce, all served over steaming white rice. It's a popular dish that's both satisfying and delicious.

Ingredients:

  • Breadcrumbs 
  • 1 Egg, beaten
  • 1 Cup White Rice
  • 2 Chicken Fillets 
  • Ginger 
  • Carrot 
  • Spring Onion
  • Vegetable Oil
  • curry powder(2 tbsp)
  • 2 Cups Chicken or Vegetable Broth
  • 1 Onion, Diced

How to make Chicken Katsu Curry

Ut enim ad minim veniam, quis nostrud exercitation ullamco laboris nisi ut aliquip ex ea commodo consequat. Duis aute irure dolor in reprehenderit in voluptate velit esse cillum dolore eu fugiat nulla pariatur.

  • 1 - Wash teh rice under cold water. Place 1 cup of rice in pot with 2 cups of water and set to boil on a low temperature. 
  • 2 - Season your protein, with salt and pepper, or your spice mix of choice.
  • 3 - Dredge the Chicken chops in flour, and shake off to remove any large clumps,  gently dip in your beaten egg mixture, and coat with panko breadcrumbs.
  • 4 - Heat vegetable oil in a pan over medium heat and fry the breaded Chicken until golden brown and cooked through, about 5-6 minutes per side.
  • 5 - In a separate saucepan, heat 2 tbsp of oil and sauté 1 diced onion until soft and translucent.
  • 6 - Add 2 tbsp of curry powder and cook for 1 minute, then pour in 2 cups of chicken or vegetable broth.
  • 7 - Simmer the curry sauce for 10-15 minutes until it thickens slightly. If needed you can add a thickening agent like flour to help your sauce thicken.
  • 8 - Once the rice has cooked and teh water has evaporated, rinse the rice again and strain any water out, place in a bowl and airate it with a fork
  • 9 - Slice the Chicken and serve over steamed rice with the curry sauce drizzled on top. Enjoy!
