Instructions: How to Make Honey and Za’atar Wings

  • In a large bowl or resealable food bag, combine olive oil, za’atar, paprika, honey, crushed garlic, lemon zest and juice, salt, and freshly ground black pepper. Add the chicken wings and toss well to coat evenly. Cover and chill in the fridge for 2–4 hours to let the flavours infuse.
  • Preheat the oven to 200ºC (Gas Mark 6). Take the marinated wings out of the fridge about 30 minutes before cooking. Arrange them in a single layer on a large non-stick baking tray, discarding excess marinade. Roast for 35–40 minutes, turning halfway through, until the wings are sticky, golden, and cooked through. The juices should run clear, and there should be no pink meat.
  • Let the wings rest for 10 minutes. Sprinkle with finely chopped red chilli if you like an extra kick. Serve with a generous scoop of herby labneh yogurt dip for a creamy, cooling contrast.
