Description
Molokhia, also known as mulukhiyah, is a delicious leaf that adds green, vegetal tastes to East Asian recipes. When boiled, it has soured vegetal overtones and a slickness similar to okra. The dried molokhia leaves may be used in mutton stews, tagines, and poultry soups. To prepare a sauce for seasoned turkey or mutton dumplings, slowly boil the molokhia leaves with chicken stock until soft, then combine with sautéed onion and lime juice. Cold drinks, stews, noodles, soups, and a variety of homemade sauces go well with it.
