Ingredients (Makes 14 flapjacks)

  • 125g unsalted butter (or vegan butter for dairy-free)
  • 100g brown sugar
  • 50g honey (swap for maple syrup for vegan option)
  • 10 Medjoul dates, pitted and chopped
  • 225g porridge oats (gluten-free if needed)
  • 50g raw almonds, chopped
  • ½ tsp ground cinnamon
  • 1–2 tbsp toasted coconut flakes, sesame or sunflower seeds
  • ¼ tsp sea salt

Instructions

  • Preheat the oven to 180°C (160°C fan) or gas mark 4.
  • Line a baking tray (around 27x18cm) with parchment paper.
  • In a saucepan, gently melt the butter, sugar, and honey together until smooth.
  • Remove from heat and stir in the oats, chopped dates, almonds, cinnamon, seeds, and sea salt.
  • Transfer to the tray, spreading and pressing the mixture down firmly with the back of a spoon.
  • Bake for 20–25 minutes, or until the edges are golden and the centre is just set.
  • Allow to cool completely in the tray before slicing into 14 glorious squares.
