Zeppole: A Classic Italian Dessert

Zeppole, a beloved Italian treat, are miniature doughnuts fried to a delectable golden hue and coated in fragrant orange-infused sugar. Unlike traditional yeasted doughnuts, zeppole leans towards the texture of cake doughnuts, boasting a delightful balance of crispiness on the outside and a fluffy, airy interior, all thanks to their frying method.

Ingredients:

2 to 3 cups of extra-virgin olive oil
2 to 3 cups of vegetable oil
2 large eggs
1 cup of whole-milk ricotta cheese
1 teaspoon of pure vanilla extract
3/4 cup of granulated sugar (divided)
1 1/4 teaspoons of finely grated orange zest (divided)
1 cup of all-purpose flour
2 teaspoons of baking powder
1/2 teaspoon of kosher salt
1/4 teaspoon of ground nutmeg


Step 1:
Fill a medium pot equipped with a deep-fry thermometer with a mixture of olive oil and vegetable oil, each at equal parts, to a depth of approximately 2 inches. Heat over medium heat until the thermometer reads 176ºC.


Step 2:
In a medium bowl, whisk together eggs, ricotta cheese, vanilla extract, 1/4 cup of granulated sugar, and 1/2 teaspoon of orange zest until the mixture is smooth. Then, add flour, baking powder, salt, and nutmeg, continuing to whisk until the batter is smooth.


Step 3:
In a shallow bowl, combine the remaining 1/2 cup of granulated sugar and 3/4 teaspoon of orange zest. Use your fingers to blend the zest into the sugar until evenly distributed.


Step 4:
Working in batches, use a 1-ounce scoop (approximately 2 tablespoons) to gently place the batter into the hot oil. Fry, turning occasionally, until the zeppole is golden brown, which usually takes about 4 minutes per batch. Adjust the heat as needed to maintain the oil temperature between 176ºC and 190ºC. Use a slotted spoon to transfer the zeppole to a plate lined with paper towels to drain briefly.


Step 5:
Roll the drained zeppole in the orange sugar mixture to coat them evenly, and enjoy!
