Panettone Bread and Butter Pudding

If you're looking for something new to do with your Panettone why not try this super easy but incredibly delicious alternative to bread and butter pudding.

What you'll need:

  • 50g softened butter 
  • 250g sliced panettone 
  • 2 eggs
  • 142ml double cream
  • 225ml milk
  • 1 tsp vanilla extract
  • 2 tbsp caster sugar
  • icing sugar, for sprinkling
  • softly whipped cream, to serve

How to make it:

  1. Heat the oven to 160C/ 140C fan/ gas 3.
  2. Grease a 850ml/1½ pint shallow baking dish with a little butter.
  3. Cut the panettone into wedges (leaving the crusts on).
  4. Lightly butter the slices with the 50g butter, cut them in half and then arrange them buttered side up in your dish.
  5. In a separate bowl whisk together the eggs, the double cream, milk, vanilla extract and caster sugar and pour over the panettone.
  6. Place the dish in a roasting tin and pour hot water around (depth of roughly 2.5cm). Bake for 35 minutes or until the pudding is just set - it should be yellow inside and nicely browned on top.
  7. Dust with icing sugar and serve with the whipped cream.
