Ingredients (Makes 4 burgers)

  • 500g lamb mince
  • 1 shallot, grated
  • ¼ tsp dried mint
  • 1½ tbsp Lebanese 7 Spice Style Blend
  • 1 egg, beaten
  • 2 tbsp Zhoug sauce
  • 150g mayonnaise
  • 1 tbsp olive oil
  • 4 brioche burger buns, halved
  • 1 small ruby gem lettuce, leaves torn
  • 2 tomatoes, sliced
  • Fresh mint leaves

Instructions

  • Combine lamb mince, grated shallot, dried mint, Lebanese 7 Spice Blend, and beaten egg in a large bowl. Season generously and mix well. Divide the mixture into four equal parts, shaping each into a patty of around 140g each. Remember, they will shrink slightly during cooking. Refrigerate patties for 30 minutes to firm up.
  • In a small bowl, stir together the zhoug sauce and mayonnaise until thoroughly combined. Set aside to allow the flavours to meld.
  • Heat olive oil in a heavy-based frying pan over medium-high heat. Add the lamb patties, cooking for 4-5 minutes on one side until nicely browned. Flip and cook an additional 3-4 minutes, ensuring they're cooked through with no pink remaining.
  • Toast the brioche buns lightly for extra texture. Spread a generous spoonful of zhoug mayo on the bottom bun halves, add a layer of lettuce, then place the cooked lamb patties on top. Add more zhoug mayo over the patties, finish with slices of tomato and fresh mint leaves, and top with the remaining bun halves.
