Rice with Lentils and caramelised onions (Mujaddara)

This dish is also know as Mujaddara in Arabic cuisines. It's extremely simple dish to make and is quite palatable as a vegetarian dish. You can make double the portions and have it the next day as it will keep for several days. 

 

Ingredients for 6 to 8 people

250g dry lentils, rinsed
1 teaspoon sea salt
1/2 tablespoon garlic powder (optional)
300g white basmati rice, rinsed
550ml of water
1 teaspoon of ground coriander
1 teaspoon of  turmeric
1 teaspoons of cinnamon
1 teaspoons of cumin
2 tablespoon ground cumin
2 tablespoons olive oil
400ml vegetable oil
4 white onions, sliced into 1/4-inch rings

Step 1 (onions)

Heat the oil in a large saucepan over a high heat and fry the onions for about 8 minutes, stirring occasionally, until golden brown and crispy. It may be better to do this task in several batches (2 or 3). Remove the onion (making sure you drain as much oil as possible) and place on a plate with kitchen paper. 

Step 2 (lentils)

Bring a large saucepan of water to the the boil and add the lentils and cook for 15 minutes until they start to soften. Drain and rinse the lentils with cold water and leave to the side.

Step 3 (wash Rice)

Rice will cook better if it has been washed. Wash and rinse the rice in the bowl pouring away the dusty water a few times until the water becomes clearer.

Step 4 (wash Rice)

Place in the pan you fried the onions over a medium heat and add the cumin seeds and fry for a couple of minutes before adding the rice and the other spices.

Add the lentils to the rice and stir well and then add the water (and salt) and cover the pan with a lid. Reduce the heat to low and cook for 25 minutes. Turn off the heat and let it rest for another 15 minutes with the lid still on the pan. 

Step 5

Place the content of the pan on a serving dish and mix half of the onions with the rice and lentils whilst keeping the other half to garnish on top of the rice when served.
