
Panettone French Toast

What you'll need:
- 6 eggs
- 500ml milk
- 1/4 whole nutmeg, finely grated
- 1/2 tsp ground cinnamon
- 1/2 panettone loaf thickly sliced
- 60g butter
- 1 tbs extra virgin olive oil
- Creme fraiche, dash of maple syrup, icing sugar and fresh fruit and nuts, to serve (can also be served with crispy bacon)
How to make it:
1. Crack the eggs, and add the milk, nutmeg, cinnamon and a pinch of salt in a large shallow dish and whisk to combine.
2. Add the panettone slices in a single layer and turn to coat it in the mixture. Leave it to soak for a couple of minutes.
3. Melt half the butter and half the oil in a large non-stick frypan over medium-high heat. Place a couple of slices of panettone in the pan and cook for 2 minutes each side or until golden. Transfer to a plate and cover with foil. Repeat with the remaining butter, oil and panettone.
4. Once done, dust with icing sugar and serve with a drizzle of maple syrup and a spoon of creme fraiche. Add fresh fruit, nuts or crispy bacon.
