Why You’ll Adore This Pork Noodle Stir Fry

This recipe has quickly become a favourite in our kitchens, and we’re pretty sure it will in yours, too. Here’s why it’s so special:

It’s Unbelievably Quick: We’re talking dinner-on-the-table-in-20-minutes quick. By using pork mince, grated onion, and a bag of frozen veg, we’ve eliminated all the prep work. It’s the ultimate quick chilli pork noodles solution for a satisfying meal without the fuss.

• A Symphony of Flavour: This isn’t your average stir-fry. We’re building layers of flavour here. The savoury pork, the aromatic warmth of fennel seeds, the gentle kick from chilli flakes, and a lip-smacking soy and honey glaze all come together in perfect harmony. It’s a truly delicious Asian pork noodles experience.

• A Complete Meal in One Pan: Protein, carbs, and a generous helping of vegetables all cooked together in one pan. It’s a balanced, hearty, and satisfying meal that leaves you with more time to relax and less time scrubbing pots. A true weeknight pork noodles wonder.

Ingredients (Serves 4)

  • 1 tbsp vegetable oil
  • 500g pack Pork Mince
  • 1 small onion, grated
  • 3 cloves garlic, finely grated
  • 2 tsp fennel seeds
  • 1 tsp chilli flakes (or more, if you like it spicy!)
  • 3 nests from a 180g pack rice noodles
  • 500g bag frozen Grilled Vegetable Mix
  • 4 tbsp soy sauce
  • 1 tbsp clear honey
  • 2 tsp white wine vinegar

Instructions:

  • Heat the oil in a large frying pan or wok over a medium-high heat. Add the pork mince and grated onion and fry for about 5 minutes. Use a wooden spoon to break up the mince, stirring until any liquid has evaporated and the pork is browned and cooked through.
  • Add the grated garlic, fennel seeds, and chilli flakes to the pan. Keep frying for another 5 minutes. Stir everything around the pan—this step toasts the spices, releasing all their incredible aromas. Your kitchen is about to smell amazing!
  • While the spices are sizzling, place your rice noodles in a large bowl and cover them with boiling water. Let them soak according to the packet instructions (usually 3-5 minutes) until they’re soft and pliable.
  • Tip the frozen vegetable mix straight into the frying pan with the pork. Cook for 7-8 minutes, stirring frequently, until the vegetables are piping hot all the way through.
  • Drizzle the soy sauce, honey, and vinegar over the pork and vegetable mixture. Drain your soaked noodles well and add them to the pan. Give everything a good, gentle toss over a low heat until the noodles are well-coated in the sauce and everything is beautifully combined.
  • Divide the chilli pork noodles between shallow bowls and serve immediately.

A Chef's Little Secret

A Note on Fennel & a Star Anise Swap: Pork, fennel, and chilli are a match made in culinary heaven. The fennel provides a subtle, sweet aniseed note that you often find in Asian cooking from ingredients like Thai basil or star anise. If you don’t have fennel seeds but happen to have star anise, feel free to pop two of those into the pan when you add the garlic.
