
Delicious Pumpkin Soup
Looking for a warming soup recipe this autumn? Look no further....this delicious pumpkin soup is easy, nutritious and cheap to make.
What you'll need:
- 11/2kg of edible pumpkin
- Olive Oil
- 1 large onion
- 3 cloves of garlic
- 1 teaspoon dried chilli
- 1 tablespoon coriander seeds
- pinch of salt
- 1 carrot
- 1 stick of celery
- 1 litre of vegetable stock (hot)
- A tablespoon of creme fraiche and some pepper to season
Serve with: some fresh crusty bread
Directions:
- Preheat the oven to 170C / 340F
- Cut the pumpkin in half and take out the seeds. Chop into wedges and place them on baking trays with a drizzle of olive oil.
- Grind the chilli and coriander seeds in a pestle and mortar with a pinch of salt and sprinkle over the pumpkin with the black pepper.
- Roast the pumpkin for 1 hour until soft.
- Whilst the pumpkin is cooking chop the onion, garlic, celery and carrot.
- Heat a glug of olive oli in a large saucepan over a medium heat and add all the vegetables. Cook until soft.
- Once the pumpkin is ready add it to the saucepan with the hot vegetable stock and blend with a stick blender.
- If you like your soup a little thinner add a little water until you get the right consistency.
- Serve in bowls with some creme fraiche, freshly ground black pepper and some nice crusty bread.
