Ingredients You'll Need

  • 4 tbsp Blue Dragon Sweet Chilli Sauce
  • 1½ tbsp soy sauce
  • 280g firm tofu, cubed into 1.5cm pieces
  • 1 tbsp Cooks' Ingredients Lemongrass Paste (ideal for curries and soups too!)
  • 1 unwaxed lime, zest and juice
  • 1½ tbsp vegetable oil
  • 1 red pepper, thinly sliced
  • 3 carrots, peeled and finely sliced or grated
  • 1 bunch salad onions, sliced diagonally
  • 2 packs cooked rice noodles (275g each)

How to Make Chinese Sweet Chilli & Tofu Noodles

Step 1: Prepare the Tofu

Preheat your grill to high. Combine 3 tbsp of sweet chilli sauce with ½ tbsp soy sauce in a bowl. Toss in the tofu cubes, ensuring they’re fully coated. Arrange the tofu cubes on a foil-lined tray, drizzle any remaining marinade over them, and grill for 8-10 minutes, turning halfway until they are golden and deliciously sticky.

Step 2: Mix the Noodle Sauce

In the same bowl used for the tofu (no need to rinse), mix the remaining 1 tbsp sweet chilli sauce, 1 tbsp soy sauce, lemongrass paste, and lime zest and juice. This aromatic blend will coat the noodles perfectly.

Step 3: Stir Fry the Vegetables and Noodles

Heat the vegetable oil in a wok or large frying pan over high heat. Quickly stir fry the sliced red pepper, carrots, and most of the salad onions (reserve a few for garnish) for about 2-3 minutes. Add the cooked rice noodles, stir fry for another minute, then pour in your prepared sauce, tossing everything well for a final minute.

Step 4: Serve Up!

Divide the noodles onto four plates, top with your grilled tofu, sprinkle with the reserved salad onions, and serve immediately. Enjoy this delightful and nutritious dish while it's hot!
