
Fluffy American-style Pancakes
Try these super easy and quick fluffy American-style pancakes - perfect for breakfast or brunch. Just top with your favourite toppings such as maple syrup, honey, fruit, bacon or chocolate spread.
What you need:
- 200g self-raising flour
- 1 ½ tsp baking powder
- 1 tbsp golden caster sugar
- Pinch of salt
- 3 eggs (large)
- 25g melted butter
- 200ml milk
- Couple of drops of vanilla essence
- Sprinkle of cinnamon (optional when serving)
How to make them:
1. Mix the self-raising flour, baking powder, golden caster sugar and a pinch of salt together in a large bowl.
2. Create a well in the centre and add the eggs, vanilla essence melted butter and milk.
3. Whisk together until smooth then pour into a jug.
4. Heat a tiny knob of butter in a non-stick frying pan over a medium heat. When the butter looks frothy, pour in rounds of the batter, approximately 8cm wide. Cook on one side for about 1-2 mins or until lots of tiny bubbles start to appear and pop on the surface. Flip the pancakes over and cook for a further minute on the other side. Repeat until the batter is used up.
Serve stacked on a plate, sprinkle a little cinnamon and add your favourite toppings.
